11 is the feast day of Saint Martin of Tours, and there are several stories associated with this date. The best-known is the legend according to which Martin hid in a goose pen because he did not want to become a bishop, and the cackling geese gave him away. As punishment, they ended up in the oven. A charming story, though historically rather dubious.   <\/p>\n<p>The calendar offers a more concrete basis: For centuries, St. Martin\u2019s Day was the due date for rent and taxes, often paid in kind, and a goose was a common form of payment. At the same time, the farming year came to an end, farmhands changed shifts, and the geese\u2014having spent the summer grazing\u2014were now at their heaviest. In addition, in the past, a period of fasting used to begin after St. Martin\u2019s Day and last until Christmas. The goose dinner was thus the last big feast before that. All of this gave rise to a tradition that continues to this day, even though no one has fasted for a long time.    <\/p>\n<p>In Lower Austria, \u201cGanslzeit\u201d has now expanded to about four weeks. Many restaurants start at the end of October, and most stop in mid- to late November. Both absorb the broth well.<\/div><\/li><li class=\"fusion-li-item\" style=\"\"><span class=\"icon-wrapper circle-no\"><i class=\"fusion-li-icon awb-icon-check\" aria-hidden=\"true\"><\/i><\/span><div class=\"fusion-li-item-content\"><strong>Chestnuts:<\/strong> roasted or glazed, either mixed with greens or served as a side dish on their own.<\/div><\/li><li class=\"fusion-li-item\" style=\"\"><span class=\"icon-wrapper circle-no\"><i class=\"fusion-li-icon awb-icon-check\" aria-hidden=\"true\"><\/i><\/span><div class=\"fusion-li-item-content\"><strong>Gravy:<\/strong> made from the pan drippings, with apples, onions, and offal\u2014not from a packet.<\/div><\/li><li class=\"fusion-li-item\" style=\"\"><span class=\"icon-wrapper circle-no\"><i class=\"fusion-li-icon awb-icon-check\" aria-hidden=\"true\"><\/i><\/span><div class=\"fusion-li-item-content\"><strong>Goose soup as a starter:<\/strong> made from the carcass and wings, served with breadcrumb dumplings or semolina dumplings.<\/div><\/li><li class=\"fusion-li-item\" style=\"\"><span class=\"icon-wrapper circle-no\"><i class=\"fusion-li-icon awb-icon-check\" aria-hidden=\"true\"><\/i><\/span><div class=\"fusion-li-item-content\"><strong>To drink:<\/strong> a full-bodied red wine from Lower Austria\u2014a Zweigelt or a Blaufr\u00e4nkischer\u2014or a dark beer. Here, the Grubenzwerg, our house beer, goes surprisingly well with the meal.<\/div><\/li><\/ul><div class=\"fusion-text fusion-text-4\"><p>How can you tell if a goose is cooked well? The skin is crispy but not burnt, the meat is juicy all the way to the bone, and the fat has been rendered off\u2014it hasn&#8217;t remained in the meat.
